Medium roast coffee

A medium roast is medium brown with a generally dry surface and a stronger flavour than a light roast. It's roasted past first crack, when the beans start to sound like popcorn popping, and stopped before second crack, the quieter cracking that comes later. So you still taste where the coffee grew, with the roast starting to come through.
