Yirgacheffe is a renowned coffee growing region in the Gedeo zone of southern Ethiopia. Grown at 1,950–2,200 MASL, the high elevation allows the cherries to mature slowly, giving more time for sugars and acids to develop.
This coffee is processed at the Danche washing station using a rare honey process in Ethiopia. Ripe cherries are carefully handpicked, sorted and selected for sugar content before fermentation. After 48 hours, the cherries are de-pulped, leaving much of the mucilage on the beans as they slowly dry under shade on raised African drying beds.
Over 14–18 days, the beans are turned regularly until they reach the ideal moisture content — acheving exceptional sweetness and complexity.
The honey process brings together the best of both worlds: the fuller, creamier mouthfeel and sweetness of honey processing with the clarity and flavour definition associated with washed coffees.
