Grown at Hacienda La Pradera in Santander, Colombia, this exceptional and rare Mokka comes from third-generation producer Oscar Daza Bautista, whose family has dedicated decades to cultivating specialty coffee through organic and sustainable farming practices.
Mokka is one of the most fascinating and challenging coffee varieties to produce, recognised for its extraordinarily small cherries and tiny seeds. So distinctive in appearance, it almost looks like an entirely different species of coffee.
Producing Mokka is no easy task. Its unusually small cherries make harvesting considerably more labour-intensive, particularly when selectively picking only the ripest fruit. Processing presents its own challenges, especially during the final milling stages, where machinery must be carefully calibrated to accommodate the tiny seeds. Even then, the process is slower, often requiring multiple passes and resulting in greater losses than conventional coffee varieties.
For this particular lot, the processing begins with selective hand-harvesting, with only cherries measuring above 20° Brix chosen to ensure optimal ripeness and sugar development. This is especially demanding with Mokka, given the sheer number of tiny cherries required to produce the same volume of coffee as larger varieties.
Following harvest, the cherries are washed and transferred into a controlled anaerobic environment, where they undergo an extended 120-hour fermentation. Throughout this five-day period, both temperature and pH are carefully monitored and controlled, allowing fermentation to progress under managed conditions while the coffee remains inside the whole cherry.
Once fermentation is complete, the cherries are transferred to raised drying beds, where they are slowly dried for up to 22 days until reaching a target moisture content of 10.8–11%. This gradual drying stage is particularly important for stabilising the coffee after its extended fermentation and preparing it for storage and milling.
The result is one of the finest examples of Mokka we've ever tasted. Rich and beautifully expressive, with notes of rum, raisin and red cherry, accompanied by a distinctive chocolate-coated sultana character. There's a wonderful depth of sweetness, balanced by vibrant acidity that keeps the cup lively and remarkably elegant.
As far as we're aware, this is currently the only Mokka available in Australia. An incredibly rare opportunity to experience a variety that is as difficult to produce as it is rewarding to drink.
