From the Huila region of southern Colombia, this Papayo comes from Finca Resinas, a family-owned farm operated by María Belén Díaz and her husband, Narciso Narváez, in the municipality of Acevedo.
This is our second coffee from María, and we're delighted to have another opportunity to showcase her work. Her coffees have consistently impressed us with their quality and distinctive flavour profiles, and this washed Papayo is another wonderful example of what she and her family are producing at Finca Resinas.
María has been involved in coffee for most of her life, growing up in a coffee-producing family before developing her own career in specialty coffee. With over 12 years of experience, including time spent working as a coffee quality analyst in Cauca, she has developed a strong understanding of coffee quality, sensory evaluation and processing techniques.
Together with her husband and three sons, María established Finca Resinas after years of working on other farms and saving towards their own property. Situated at approximately 1,800 metres above sea level, the farm produces a range of varieties including Papayo, Caturra, Castillo, Pink Bourbon and Gesha.
And here's something interesting! If you're a fan of the Ombligon variety, you'll definitely want to try this coffee. Papayo and Ombligon are often considered the same variety, with the names used interchangeably. Both share a distinctive elongated cherry shape with a pronounced, pointed tip.
This particular Papayo undergoes a carefully managed washed process, beginning with 36 hours of pre-fermentation in whole cherry, stored inside GrainPro bags. Following this initial stage, the cherries are depulped and undergo a further 36 hours of fermentation with their mucilage intact, again inside GrainPro bags. These two fermentation stages encourage the development of fruit sweetness and floral complexity while maintaining the clarity associated with washed processing.
The coffee is then washed in two stages to remove the remaining mucilage before being sun-dried on covered drying structures for approximately 12 days. Once dried, the coffee undergoes a further 15-day stabilisation period in GrainPro bags, stored in a dark room to allow the coffee to settle before milling and export.
In the cup, expect a particularly vibrant and aromatic expression of Papayo, with an abundance of tropical fruit and delicate floral characteristics. Notes of ripe papaya, tangerine and cape gooseberry bring a combination of juicy sweetness and lively acidity, while lavender-like florals add a fragrant dimension. The body is creamy and rounded, providing a pleasant balance to its bright, fruit-forward character.
An elegant and expressive washed Papayo, combining tropical fruit sweetness, floral complexity and a lively, refreshing acidity.
Flavour profile: Lavender, tangerine, papaya.
