From the highlands of Nariño in southern Colombia, this Caturra comes from Finca El Paseo, a family-owned farm operated by Huver Castillo in Buesaco. This coffee is a particularly expressive example of anaerobic washed processing, developed to showcase an intensely floral and botanical flavour profile.
Huver is a third-generation coffee producer whose journey into specialty coffee began in 2015, when he left his career as a mathematics teacher to return to the family farm. El Paseo has been in the family for more than 20 years, situated on the slopes overlooking the Buesaco valley at elevations between 1,750 and 1,950 metres above sea level. Surrounded by native shade trees, the farm provides an ideal environment for growing high-quality coffee.
This particular lot undergoes an elaborate multi-stage fermentation process, beginning with carefully selected ripe Caturra cherries. The cherries first undergo 36 hours of pre-fermentation while still intact, before being floated and sanitised using a sea salt solution. They are then transferred into stainless steel tanks equipped with regulated pressure-release valves for anaerobic fermentation.
Following this initial stage, the cherries are depulped and the liquid released during fermentation is collected. Approximately 200 litres of this liquid is reintroduced into each fermentation tank alongside selected enzymes, with the intention of encouraging the development of pronounced floral characteristics. The coffee then undergoes an extended six-day fermentation before being mechanically dried in silos for 2–3 days at temperatures below 38°C. Finally, the coffee is left to stabilise for 15 days.
In the cup, expect a particularly aromatic and expressive profile, dominated by bright citrus and delicate botanical characteristics. Notes of fresh lime and lemongrass lead the experience, accompanied by an abundance of florals and a refreshing, almost tea-like quality. The acidity is lively and vibrant, balanced by a pleasant sweetness that brings structure to its distinctive flavour profile.
A fascinating expression of Caturra, where carefully controlled fermentation transforms a familiar variety into something remarkably floral, citrus-driven and aromatic.
