Altos de Maria is grown across the small farms of Santa Maria, Huila, between 1,600 and 2,000 metres above sea level. This lot is Castillo, fermented for up to 28 days before a full wash, a patient process that builds real depth into the cup.
The cup is bright and lively. Raspberry sweetness leads, followed by delicate elderflower and crisp red apple acidity that keeps the finish fresh and clean.
